Power Bowls to Energize Pregnant Moms

Ingredients

  • 1 Can Safe Catch Seasoned Elite Garlic Herb Wild Tuna
  • 1 Jewel Sweet Potato (Large)
  • 1 Cauliflower Head
  • 1 Ripe Avocado
  • 1 Bag Spinach or Super Greens
  • 2 Tbsp Olive Oil
  • ½ tsp Yellow Curry
  • ½ tsp Ginger Powder
  • ¼ tsp Cayenne Powder
  • Salt & Pepper to taste
  • Oil of choice for roasting

Tools you'll need

  • Medium Mixing Bowl
  • Chef’s Knife
  • Cutting Board
  • Baking Pan
  • Spatula
  • Measuring Spoons & Cups

Instructions

  1. Preheat oven to 400 Degrees F
  2. In Medium Mixing Bowl add olive oil, yellow curry, ginger, and cayenne powders, then whisk with a fork until blended
  3. Knife Work: Rinse sweet potato thoroughly, slice into ½ inch disks, quarter each disk, and place in medium mixing bowl with olive oil & spice blend, stir to ensure each sweet potato is seasoned, then place on a lightly oiled baking sheet
  4. Knife Work: Rinse cauliflower head and cut into bite-sized florets, place in mixing bowl with any remaining spiced oil, salt & pepper to taste and place on the oiled baking sheet with the sweet potatoes
  5. Bake vegetables at 400 Degrees F – at 20 minutes remove the cauliflower, flip the Sweet potatoes and bake for another 20 minutes, with both receiving a nice toasted brown coloring, let cool before building power bowls
  6. Rinse spinach or super greens mix, drain dry and place one large handful in the bottom of the bowl, add a quarter of the sweet potatoes and roasted cauliflower to the bowl.
  7. Open each can of Safe Catch Seasoned Elite Garlic Herb Safe Catch Wild Tuna (Do not drain), flake with a fork until all liquid is absorbed by the tuna, then split tuna between two power bowls
  8. Knife Work: Carefully halve avocado, remove pit and peel skin, then thinly slice and place in the power bowl.
  9. Note: You should have enough roasted vegetables remaining to make two additional power bowls, so refrigerate and they should keep for 3-4 days. You can also use two cans of Safe Catch Seasoned Elite Garlic Herb Tuna and the whole avocado to create 4 power bowls at a time.
