One Pan Butter-Ranch Mackerel Rice Recipe

One pan butter-ranch mackerel rice dinner coming right up! This super simple recipe can be on the dinner table in 30 minutes and is full of bold + delicious flavors. I love that this rice recipe is filled with Omega-3’s and heart-healthy nutrients. It’s such a tasty way to level up your weeknight mackerel rice dish.

One Pan Butter-Ranch Mackerel Rice

Ingredients

  • 2 Cans Safe Catch Wild Mackerel in Olive Oil
  • 1 Cup Dry Jasmine Rice
  • 1 + 1/2 Cup Bone Broth or Water
  • 1 Tbsp + 2-3 Tbsp Ghee or Butter
  • 1/4 Cup your favorite Ranch Seasoning
  • Optional: Fresh chopped herbs + red pepper flakes for garnishing

  • Measuring Cups
  • Measuring Spoons
  • Fork
  • Spoon
  • Knife (optional)
  • Cutting Board (optional)

Instructions

  • Add rice, bone broth(or water), and 1 Tbsp of butter to a pan and bring to a boil.
  • Give a good stir and cover with a tight-fit lid.
  • Reduce heat to a slow, steady simmer and cook for 15 minutes – do NOT remove the lid.
  • While rice is cooking, prepare your Safe Catch Mackerel, by opening the can and using a fork to break apart the mackerel like you would tuna for a tuna salad. DO NOT DRAIN!!
  • When the rice is done cooking after 15 minutes, turn the heat off and remove from heat, keeping the lid on.
  • Let steam for an additional 10 minutes.
  • When 10 minutes is up, remove the lid and fluff your rice.
  • Add in the remaining 2-3 Tbsp of butter and your ranch seasoning. Stir together well.
  • Add in your mackerel and give another good stir until everything is combined evenly making the perfect butter-ranch mackerel rice.
  • Let cool and enjoy!

SERVING SUGGESTION

Garnish with fresh chopped herbs such as parsley or green onion for a pop of color and added fresh flavor or with a few red pepper flakes if you like a little heat.

To cut down on time, even more, you could also use pre-cooked rice packets, too! Same great dish, in half the time.
